That Sam-I-Am was sure that he didn’t like green eggs and ham (affiliate link)… until he tried them.
AC8 has been reading her favorite book to AG5 almost daily for the past several weeks. This morning, I decided to surprise my crew with a Dr. Seuss inspired breakfast.
I wasn’t quite sure how they’d respond since I don’t exactly have a house full of adventurous eaters, but to my surprise, they ALL ate it up… with smiles even! Apparently, they learned a little something from Sam-I-Am!
Green Eggs & Ham
1 C of baby spinach
6 eggs
salt and pepper, to taste
Sliced ham
Butter or pan spray for the skillet
Mix eggs, spinach, salt, and pepper in a blender until smooth. Pour into a hot, buttered skillet and stir until done. Once the eggs are done and removed, add the ham to the hot pan. Flip once for even heating. Serve and enjoy!
Super easy! My favorite part–besides the fact that my kids actually ate it–is that there were no artificial food-dyes, only fresh, healthy veggies.
I’m already making plans for us to celebrate our favorite children’s author’s birthday, March 2, so we’ll definitely bring these out again then.
